Get creative with breakfast for dinner

We have breakfast-for-dinner every Tuesday. Almost every Tuesday – when we don’t, the kids question it. I love breakfast food – having it for dinner is a super way to enjoy it. So call it BRINNER or call it LOVE, I’m in.

One of our favorite things to make – omelets. They’re my favorite because Trevor’s awesome at making them, so he takes over. They are the kids’ favorite because they are custom. Each child gets to pick their own omelet fillings, so it is a made-to-order dinner especially for them – what’s not to love!

 

Custom Omelets
Prep Time: 15-20 minutes
Cook Time: 5 minutes
Serves 6-8

Ingredients
1 dozen eggs
1/2 cup milk

Filling Ingredients:
Shredded cheese
Bacon (precooked and diced)
Sausage (precooked)
Ham (diced)
Chopped onions
Chopped green peppers
Diced tomatoes
Diced cilantro
Salt and pepper

Directions
Make the egg base by whipping the eggs in a bowl with about ½ cup milk. Stir in salt and pepper to taste. Set up all your filling ingredients easily accessible to your pan. Preheat your pan and then add a few drops of cooking oil (the Calphalon Omelet Pan is amazing and really doesn’t take hardly any cooking oil). Pour in approximately 1 cup of the egg mixture and tilt the pan so the egg spreads and covers the entire bottom of the pan. As the egg mixture cooks, add the custom ingredients to the center of the to-be omelet.

Put the pan in a preheated oven for about 20-30 seconds (YES, this Calphalon omelet pan is oven safe up to 500 degrees. This is our secret step – many recipes just stop at this point, but I like to make sure the egg mixture is nice and firmly cooked. Slide the Custom Omelet onto a plate…

…And let the child-in-waiting take it away. She’s holding a plain egg and sausage – perfect for her.
